Here's the honest version - this exists because mincing garlic in the middle of a rush is a losing game. Having it already infused means the flavor lands the same way every time, which matters when you're cooking the same dish hundreds of times a week. We developed these oils for our restaurants over the years and we cook with them daily, and this is still the bottle my hand goes to first on a weeknight.
