What Extra Virgin Olive Oil Actually Means
"Extra virgin" is the most recognized phrase in the olive oil aisle and one of the least understood. Most people know it means better. Fewer could say what it actually measures, and almost nobody knows that the grade is defined by two completely separate tests — one chemical, one performed by human beings with trained palates.
We buy olive oil by the case for three restaurants, and we sell it by the bottle. Understanding what the grade does and does not guarantee is the difference between paying for quality and paying for a phrase on a label.
The legal definition
In the United States, olive oil grades are set by the USDA. For extra virgin, the standard requires virgin olive oil with excellent flavor and odor — a median of defects of zero and a median of fruitiness greater than zero — and a free fatty acid content, expressed as oleic acid, of no more than 0.8 grams per 100 grams [1].
Two things are being measured there, and they are worth separating.
Free fatty acid content is a chemical measure of degradation. When the fat molecules in olive oil break down, they release free fatty acids. High levels mean the fruit was damaged, overripe, badly stored, or slow to reach the mill. It is essentially a measure of how well the olives were handled between the tree and the press.
Median of defects and median of fruitiness are sensory measures, determined by a trained tasting panel. "Median of defects of zero" means the panel found no detectable flaw. "Median of fruitiness greater than zero" means they could actually taste the olive.
That second requirement is the one people miss. Extra virgin is not merely an absence of problems. The oil has to positively taste of fruit.
The grades, and the number that surprises everyone

Look at the last row. Refined olive oil has a stricter free fatty acid limit than extra virgin — 0.3 against 0.8.
If free fatty acid content were the whole story, refined olive oil would be the premium product. It is not, and the reason exposes what the grading system is really doing. Refining is a chemical process that strips out the compounds responsible for flavor, aroma, color, and much of the nutritional value. The USDA describes refined olive oil as flavorless and odorless [1]. You can achieve a very low free fatty acid number by removing everything that made the oil worth having.
Extra virgin is not the cleanest oil by chemistry. It is the best oil that has had nothing done to it.
What the tasting panel is looking for
The sensory side of the standard is genuinely rigorous and much less known than the chemistry.
Trained panels assess three positive attributes: fruitiness, bitterness, and pungency [2]. Bitterness and pungency being positive attributes surprises people. That peppery catch at the back of the throat from a fresh, high-quality oil is not a flaw — it is associated with oleocanthal, a polyphenol, and it is a sign the oil is alive.
Panels also screen for five defects: frostbitten, fusty, musty, rancid, and winey. Any one of them detected at the median disqualifies the oil from the extra virgin grade entirely [2].
This is why extra virgin cannot be manufactured. You cannot refine your way to it or blend your way to it. Either the fruit was good and handled well, or it was not.
California sets a higher bar
Worth knowing if you buy domestic oil: the California standard is stricter than the international one, requiring free fatty acid below 0.5 grams per 100 grams rather than 0.8 [2]. Many of the best oils come in nearer 0.3.
California also requires larger producers — those making more than 5,000 gallons a year — to meet additional testing standards, and runs random verification. It is one of the more accountable olive oil regimes anywhere.
What "cold pressed" actually refers to
Another phrase that has drifted from its original meaning. Extra virgin olive oil is by definition extracted mechanically, without heat or chemical solvents — the term "cold pressed" derives from the traditional hydraulic press [2].
Since mechanical extraction without heat is already a requirement of the extra virgin grade, "cold pressed" on an extra virgin label is largely redundant. It is not misleading, but it is not additional information either. Most modern mills use centrifugal extraction rather than presses at all.
Why flavored oils cannot be extra virgin
This one matters to us directly, and it is the reason our own labels read the way they do.
The international sensory definition holds that extra virgin olive oil must have aromas and flavors deriving from sound, fresh olives. An oil flavored with anything other than olives therefore cannot carry the extra virgin designation [3]. This applies even to co-milled oils, where the flavoring is crushed together with the fruit from the very beginning.
The former executive director of the International Olive Council put it plainly in 2018: flavored oils cannot be considered olive oils under the strict definition [4].
This is not a quality judgment. A superb garlic oil can be built on a superb base. It is a definitional boundary, and it is why our unflavored bottle is labeled extra virgin while our garlic and rosemary garlic bottles are not. Those use a base of extra virgin and virgin olive oil, chosen deliberately, because a blend carries infused flavor more evenly than a single assertive oil does.
How to judge an oil without a laboratory
Grades tell you what a producer had to prove. They do not tell you whether the bottle in front of you is still good — oil degrades in storage, and a bottle that qualified as extra virgin at bottling may not taste like it a year later on a warm shelf.
Look for a harvest date, not just a best-by date. Olive oil is a fruit juice and it does not improve with age. A harvest date within the last twelve to eighteen months is what you want. A producer who prints one is telling you something; a producer who prints only a distant best-by date is telling you something too.
Buy dark glass or tin. Light drives oxidation. Clear bottles under supermarket lighting are working against the product.
Taste it neat. Pour a small amount, warm the glass in your hand, and sip. You are looking for fruit up front, then possibly bitterness, then a peppery catch at the back of the throat. That progression is the signature of a living oil. Flat, greasy, or waxy means it is past its best. A crayon or putty note means rancidity.
Store it away from heat and light. A cupboard, not the counter beside the stove. Heat is the fastest way to ruin good oil.
Where ours comes from
Our oil is pressed in California by a family-run grower and miller who has been in the olive oil business since 1998 and farms an organic orchard in the Santa Ynez Valley. We buy their certified extra virgin line — the same oil we have been cooking with across our restaurants since 2009, long before we put our name on a bottle.
